How are the olives are processed?
In order to maintain the highest quality the olives are picked by hand, with the aid of a comb in early November whilst still green in order to harvest them straight from the tree. This prevents the olives from mixing with leaves and dirt on the ground. No mechanical methods are used to prevent damage to the olives including cuts which would begin oxidising the fruit and increasing the acidity level of the resulting oil.
What does a 0.1% acidity mean?
0.1% acidity has nothing to do with the sharpness of the taste. It relates more to the composition of the oil after pressing. The oils in Spain require an official government certification of grade before it can be sold by the farmer. To do this a sample of the oil is sent to the government labs where they measure the acidity level. If it is 0.8% or less then it is allowed to be sold as "extra" virgin olive oil. Acidities of 1% or less mean that it can only be sold as either virgin olive oil or catering olive oil.
Why do they measure acidity?
The reason is that when an olive gets a cut, this cut oxidises and the resulting oil has a higher acidity, also if there is a long gap between picking and processing the same happens or if the olives are picked from the ground together with leaves and dirt. All these factors increase the acidity level of the final oil.
