How does Rafael reduce water usage by 30%?

How are the olives are processed?
 
In order to maintain the highest quality the olives are picked by hand, with the aid of a comb in early November whilst still green in order to harvest them straight from the tree. This prevents the olives from mixing with leaves and dirt on the ground. No mechanical methods are used to prevent damage to the olives including cuts which would begin oxidising the fruit and increasing the acidity level of the resulting oil.
 
What does a 0.1% acidity mean?
 
0.1% acidity has nothing to do with the sharpness of the taste. It relates more to the composition of the oil after pressing. The oils in Spain require an official government certification of grade before it can be sold by the farmer. To do this a sample of the oil is sent to the government labs where they measure the acidity level. If it is 0.8% or less then it is allowed to be sold as "extra" virgin olive oil. Acidities of 1% or less mean that it can only be sold as either virgin olive oil or catering olive oil.
 
 
Why do they measure acidity?
 
The reason is that when an olive gets a cut, this cut oxidises and the resulting oil has a higher acidity, also if there is a long gap between picking and processing the same happens or if the olives are picked from the ground together with leaves and dirt. All these factors increase the acidity level of the final oil. What this means is that Rafael picks the olives directly from the tree by hand and they are processed and bottled within 24 hours, nothing added nothing taken away. The "juice" of the olives!

Why consume good quality Extra Virgin olive oil?
 
It is argued that extra virgin olive oil which has been carefully processed arrives to the consumer with a higher level of the good components than lower quality extra virgin olive oils it may have a higher level of vitamin E and phenols, because it is less processed (www.healingdaily.com). Does a mediterranean diet lower the incidence of heart disease?
 
Studies have shown that olive oil offers protection against heart disease by controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. (1-3) No other naturally produced oil has as large an amount of monounsaturated as olive oil -mainly oleic acid. Most people do quite well with it since it does not upset the critical omega 6 to omega 3 ratio and most of the fatty acids in olive oil are actually an omega-9 oil which is monounsaturated.
 
Although some sources argue that the benefit if this diet is that it is rich in vegetables and salads, not the extra virgin olive oil. However, if the extra virgin olive oil helps salads and vegetables be more palatable then: why not use it?
Not all fats are bad for the body in fact some fats such as those in extra virgin olive oil: Oro del Desierto are positively good for the system. 
 
Does orgainc extra virgin olive oil preserve a healthy and relatively disease-free population?
Filik and Ozyilkan (The European Journal of Clinical Nutrition, 2003) conclude that the consumption of organic extra virgin olive oil is a significant factor in the preservation of a healthy and relatively disease-free population. Evidence  based on the unique profile of the phenolic fraction of extra virgin olive oil along with high intakes of squaline and oleic acid all of which are argued to contribute to the epidemologic data indicating that a mediterranean diet contributes towards the protective effects against cancer and coronary disease.

  • Breast cancer (Filik and Ozyilkan, 2003)
  • Endometrial cancer (Filik and Ozyilkan, 2003)
  • Prostrate cancer (Filik and Ozyilkan, 2003)
  • Alzheimers (Mintel, 2010)
A lower incidence of cancer of the large bowel, less breast cancer and endometrium and prostrate cancer is attributed to the action of the olive oil components on the free radicals and they cite Trichopoulou  et al  (2000).

What's the difference?
Saturated fats are a much less healthy choice and, according to government recommendations, must be avoided if in pursuit of a healthy diet. Saturated fats are present in butter and similar solid spreads. How does it work?
